Soy Curls in Spinach, Mushroom and Tomato Sauce

I grabbed soy curls out of the freezer, and spinach, mushrooms and marinara sauce out of the refrigerator. Use whatever amount of each ingredient that feels right for YOU! On medium-high heat saute onion and garlic for a minute or so. Add soy curls and Chik-Style seasoning and saute for about three minutes. Add mushrooms and continue sauteing for a few more minutes. Add marinara sauce and spinach, stir and cover. Reduce heat and simmer for 5 minutes. Serve with vegan Parmesan cheese and ground black pepper.  Thanks for the ordering links (and a great recipe) – I’m looking forward to trying them! I will have to give it a try. Have you ever seen them at Whole Foods? If not, I’ll be shopping at Vegan Essentials for them! It’s much more like that — but the pieces are bigger (not like TVP crumbles).  I have not seen them at stores I frequent.  Butler Foods has a store locator on their site. I’ll check out Vegan Essentials for the curls. I was just turned on to the most amazing seitan made by a small company named Upton’s Originals. IT comes in a variety of flavors and it rocks. I ordered it from Vegan Essentials because my Whole Foods won’t be carrying it until the end of this month or next. And I've stopped chasing skinny. I am proof that you are never too old to change!
