Vegan who doesn't care for lentils here, post your best lentil recipes and change my mind! Separately, boil potatoes until very soft, then drain and mash well with margarine, salt, and milk. Preheat oven to 350F (175C). Saute onion, carrot, celery, and garlic in olive oil over medium heat. Add flour, spices, and cooked lentils, cook for a minute or two. Deglaze with the vegetable broth, then add parsley, mustard, and soy sauce. Let simmer until thickened, and add frozen peas at the end. Pour mixture into an 8x8" pan, and top with mashed potatoes. Add a little oil and saute garlic and onions until onions are transparent. Add lentils, chili powder, cumin, and oregano, and stir for 1 minute. Add broth, bring to a boil, and cover. Reduce heat to a simmer and let cook for 25-30 minutes. Uncover, cook 6-8 minutes, until mixture thickens. Mash slightly to create a meatier texture.
