I’ve never bought kohlrabi, never eaten it (to the best of my knowledge), and have certainly never cooked with it before. But I’m always into trying new vegetables, and in fact sometimes I buy something that I have absolutely no idea how to cook on purpose, to force myself to try it! You see I hate wasting food, so if it’s sitting there in the veggie drawer in the fridge, I will sooner or later find a way to use it. She is going to eat you up! Kohlrabi comes in both purple and green, but both varieties have the same ivory-colored flesh inside. It can be eaten raw or cooked, but at this time of the year it is especially popular grated or julienned into salads. Kohlrabi must be peeled well – I used a knife to take off thick slices of the gnarly outer skin and the fibrous layer that is just under the skin. But it is quick and easy to cut, and the flesh underneath is crisp, crunchy and not tough at all. Choose smaller bulbs as the flesh will be sweeter and more tender. Mango, cilantro and lime are combined with the kohlrabi to make this tasty, refreshing side salad which is incredibly simple to throw together, but looks really cool! My salad is based off this one here. Mix everything together in a bowl. Chill in the fridge for an hour or so before eating. I love mango and kohlrabi so I know I will be trying this soon. Thanks for sharing with Souper Sundays. Sounds like a delicious combination with the mango! I’m a big fan of kohlrabie. We used to grow it in the garden growing up and the farm I buy my produce from has been selling them. I slice them and sprinkle with salt and it them like chips.
