Anyone made Miyoko Schinner's butter from her book Vegan Pantry?

I was wondering if anyone else had tried out this recipe. I just finished forming my little butter bricks, wrapped in wax paper and sealed with the heat of my hand. I noticed that the texture of mine (over her storebought stuff) is a little different - mind tends to coat the mouth more and is a teeny bit grainy despite being tornadoed in a Vitamix. I did use lecithin granules as opposed to liquid since that's all I could find here, and used a teeny bit of vinegar to make the cultured version, but didn't make any weirdo subs anywhere. I just tasted the bits that came off my knife, I'm sure it's fine on a piece of toast or in some cookies, but just wanted to see if anyone had had a similar experience, and knew the culprit. Maybe I just measured badly!
