I’m not sure if you guys have seen the healthy vegan banana oatmeal cookies – they are like 3 ingredients, you bake them up and they taste pretty darn good!  I decided to take that same idea of simplicity and deliciousness and combine it into pumpkin pie oatmeal bites! If you don’t know, I rarely  (if ever) count calories, but these little suckers are under 50 calories a piece and they are pretty dog gone delicious!  They are not rich, and heavy like traditional pumpkin pie, but they do taste pretty great (I might be a little partial haha).  In order to make them brighter – they got a little grainy, but I SWEAR the pumpkin pie bites taste great! 4 Ingredient Pumpkin Pie Bites [Vegan]   Print Prep time 10 mins Cook time 20 mins Total time 30 mins   Recipe type: Dessert Serves: 12 cookies Ingredients 1 Cup Pumpkin Purée 1 Cup Rolled Oats 2 Tbsp Maple Syrup 2 tsp Pumpkin Pie Spice Instructions Preheat the Oven to 300 degrees. In a large bowl mix the pumpkin, maple syrup, and pumpkin pie spice until well combined. Add in the oats, mix well and let sit for 5 minutes. On a baking sheet place heaping tablespoons of the mixture flattened into small cookies! You should get about 12 "bites" total. Bake for 20-25 minute flipping half way through - the outside should crisp up a bit, but the middle will stay chewy, yum! Allow them to cool for a few minutes, then dig in! Tips and Ideas Don't have pumpkin pie spice? That spice blend is to rich for my blood always haha! For this recipe just do 1½ tsp cinnamon, ½ tsp nutmeg!Wanna spice it up, throw in some dairy free chocolate chips!Whip up some coconut cream and top for an authentic experience.
