Die-hard cupcake fans have their heart on usually one purveyor and won’t steer to another cupcake shop (ever)! If the long lines at these shops deter you from enjoying soft and moist cupcakes with creamy, fluffy icing on top, try making some vegan versions of delicious cupcakes to enjoy at home. And the world record for eating these scrumptious morsels is 29 cupcakes in 30 seconds! Now, that’s a lot of cupcakes! What are you waiting for? Go indulge yourself in this sweet snack! But Irish Cream of course isn’t vegan so I made my own by mixing single-malt Scotch, soy creamer, coffee granules, maple syrup, chocolate, and vanilla. It was so mindblowingly delicious that I wanted to drink it all up. I’m glad I didn’t, though, because it tasted just as fabulous baked into these cupcakes. I also added a teaspoon of Scotch to the frosting, which gave them that extra kick. Not so easy as it sounds. I checked most of the vegan recipes you can find for cupcakes, but all of them involved sugar and most of them were made with white flour. Two of my least favorite ingredients. So at the end I decided to go with the winner, meaning I altered the winning cupcakes war recipe of vegan Chef Chloe by replacing the main ingredients. Corn flour for the white one, honey for the sugar, real vanilla for the extract, and added 1 teaspoon guar gum as a gluing agent. The cupcakes turned out to be super delicious, fluffy, and irresistible for an adult as well as a child. Go on, give them a try. Then you can decorate the jar with twine, a rustic tag with a message etc… The present will be enjoyed and will also show how much care you have put into it!
